This culinary holiday begin with a guided tour in the vineyards located within one of the most typical areas of Apulia, the Itria Valley, between Locorotondo and Martina Franca. This area has always been particularly suited for the growing of white grapes, such as the high-quality autochthonous varieties Verdeca, Bianco d’Alessano and Fiano Minutolo that you will taste during your wine tasting. Another typical product of the Itria Valley is “Capocollo of Martina Franca", a cold cut salami obtained from meat of pigs raised in big farms situated in this area that you will taste in a local and traditional meat factory. In this tour you can’t miss to discover the king of Apulia, the extra virgin olive oil: you will visit an oil mill where you will discover all the steps of its production with a final oil tasting. You will spend a full day in an authentic “masseria” where, during the morning, you will visit the animals of the farm and see the production of handmade “mozzarella” and in the afternoon, you will learn how to make focaccia and “panzerotti” that you will taste at dinner. With an expert chef you will learn how to make orecchiette in his restaurant Antica Locanda where you will enjoy a Michelin dinner.
